Things have definitely calmed down since our
miscommunication fiasco. The only pictures I’ve taken in the past week that are
worthy of showing are food pictures. Honestly, I should just start a food blog.
But there are already too many out there that mind probably will not make a big
difference in the grand scheme of things.
I baked two things over the weekend: pop-tarts and lemon curd
tartlets. I had made pop tarts once before here with another intern, but I
wanted to do it myself from start to finish, just to see what that would feel
like. I also made berry filling ones, whereas the first time we only made
cinnamon sugar. The blueberry ones were DELICIOUS. And the pastry turned out
very flaky and yummy, better than the first time (because we played with the
dough way too much). Here are some pictures:

The second thing I made were lemon curd tartlets. To be
honest, I was not planning on making these, but when I went to the grocery
store over the weekend, I found out the raspberries were buy one get one free.
We also had a bridal shower for Corrie (one of the intern coordinators) on
Sunday, so I was casually looking into bridal shower foods when I stumbled
across cute little tartlets with berries on top! So instead of just making
chocolate covered strawberries, I also made lemon curd tartlets.

It was my first time making lemon curd, and it was quite
simple. And yummy, if I may say so myself. They turned out really well haha. Not only do they taste amazing, but they also look delightful (that is Jennifer's favorite word. She describes 95% of her acquaintances as "delightful." I think my tarts are more delightful than most of those people :P). See for yourself!

And then there was
the actual bridal shower. I think this is my first ever bridal shower. It
consisted of food, games, and gifts, along with some Corrie sharing (how she
and her fiancé Josh met, their stories, etc.). It was kind of sad that not all
the intern ladies were able to make it, but those who made it still had a great
time.

Wednesdays are always eventful and special because I get to go
to Disney for field ministry. It’s always an adventure because we never know what
will happen or who we will meet and talk to. Yesterday, we visited the China pavilion, and I made a connection with a cast member through some toys! It was his first week at work, and he was struggling with the Chinese yo-yo, so I came to show him how it's properly done.

We also went to the Japan
pavilion hoping to find the lady we ran into our first week at Epcot (we’ll
call her Nana). I messaged her last night, asking if she was going to be
working, and she said that she was but she was going to be in a training, so we
might find her at her normal origami booth. I didn’t know if we would run into
her, but we visited the Japan pavilion anyway. We walked around the pavilion in
a different order than we usually did, and as we wandered towards the entrance
of the store Nana normally worked at, she came rushing out of the door holding
a bright red folder. We saw each other and greeted one another. She had
forgotten some important documents for the training and rushed back to the pavilion
to retrieve it. We chatted for a little before she rushed off to her training.
This small interaction brought me so much life. It reminded
me of all the little interactions that God orchestrates to remind us that He is
a detailed God. He cares about the minute details of our lives, and the
magnificent display of His love is often found in the tiny specificities.
Like receiving an encouraging text from a dear friend in a moment of
wistfulness. And yes, I miss details (I’m realizing that people around here don’t
really care about that, sadly). But getting carried away. Back to Nana.
Prayer request: Song and I are getting dinner with Nana this
Sunday! We are going to Susuru and I am very excited to get some
authentic-looking Japanese food. This may be the only time that we get to hang
out with her, because she will be going back to Japan in a couple of weeks! Please
pray that we will have fruitful spiritual conversation, and that she will be able
to hear the gospel.
Speaking of ethnic food, I got to go to an authentic Mexican
food place last week with my roommate Keren and some other interns. It was a
breath of fresh air from all the Americanized tacos we’ve been having from
Rubio’s and BBQ places. Keren and I went for a walk after, and she shared that
finding this spot really helped her feel like she could belong here. That there
are her people hidden away in Orlando. It’s so encouraging to hear, that we are
all slowly but surely settling into life in the southeast corner of the US.
